It certainly isn’t news that the foodservice segment is growing. The operators who are in tune with the changing face of the marketplace will be better prepared and are more willing to step out on the thin branches of the perishable departments. The need for identity is high. The need for differentiation is high. Creating a “Destination Food Place” is not only an achievable element for every operator, but a necessity in the highly competitive marketplace of today. The niches that independent markets provide will need to be continually carved out and refined.
